Good Monday morning everyone. Yep green for the Eagles. For those that don't watch football like me, the Eagles won the trophy of the year. For only the 2nd time in the history of football, making it a real big deal in my Eagles fan based home.
The weekend was busy no doubt about it. First was the dance on Saturday, but before that it was candy practice and prep for the dance.
Donna gave me a double boiler for my birthday and I had to try it out, and while out shopping I came across lollipop molds and sticks, so my PA Dutch candy had to be made, you know I was too excited not to try it out.
Snacks for the dance needed fixing. Then there is what ya gonna wear part of the planning. I promise you I know a week in advance even more than that what I am wearing, only to be an hour before the dance having tried on 5 outfits and I still don't know what I am going to wear.
You see we don't just go to the dance, we plan and execute like it was a major event. Getting ready for the dance is not for the faint of heart. Normally however it turns out to have been worth every ounce of effort.
Second, was Sunday, Super Bowl Sunday! The Eagles played and friends all over the state gathered to watch and eat together. We were no different, we went to friends house and cheered loud and clear for all the world to hear.
I promise you they heard us. It was a wonderful time made even better with a good solid win.
The Eagles have been known to lose a game after gaining a large almost unbeatable lead, and in the last 3 minutes of the game it looked like the Eagles might just do that again, fortunately the other team was simply able to keep the game from being a complete blow out, and giving the fans a moment of anxiety.
We also celebrated my becoming another year older. I know how old I am but I actually don't believe it. I see the age in the mirror, and feel it when I stand up and so on, but my brain says no way, we are only 12.
Whats For Dinner;
Appetizers and Drinks, a success and a flop.
The appetizer I found on Just A Pinch recipe web site. It sounded good, was high lighted by JAP and have some good reviews. Only used a few ingredients and actually sounded very good, well everything but the name sounded good. I gave it a try. I made one change. I cut the recipe in half. Otherwise I made it as written. I will never make it again. Even in half it was way too much.
Once all mixed together before the oven I split it in half again. I took it to the crafting thing I told you about, and then brought it home and threw it away. Once it cooled it was rock hard and so unappealing, I did not even take a single photo. The second half I took to the dance then brought it home and threw it away. It certainly lives up to the authors name for it. Anyway at the dance I served it only warmed up a little in the microwave and then sprinkled the cheese on it. People were nice and tried it, but I noticed they tasted it and left it on their plates unfinished. "Texas Trash" as it is titled will never be made by me again. I see no way to improve this, from it's appearance to the taste.
To the drink, now there I found a real gem on line. Face Book can be a fountain of information for sure, it is just sifting through it all and finding the information that is actually correct and works. This works. It was in the reels, there is no link and only basic measurements, an ingredients list, and some general instructions, but really as simple as this is, it is all you need.
Pina Colada drink mix,
In the video the guy adds the alcohol at the time he mixes it all together. I opted to make mine virgin and never adding alcohol to it. I made it the night before and every minute of time all the ingredients melded in the fridge was worth it. I taste tested as soon as I mixed it and thought NO! There was no Pina in my colada, but I put it in the fridge anyway and hoped for the best, every few hours I shook it up and about 3 maybe 4 hours in I tasted it again. Smiling I put the bottle back in the fridge and knew I had a hit on my hands.
I certainly didn't bring it back home or throw it away.
You will need Pineapple juice, cream of coconut, ( not milk ) and strawberries.
I used a 64 ounce jar of juice, I removed 2 cups of the juice from the bottle and added the entire 22 ounce container of cream of coconut. I chopped up about 8 maybe 10 strawberries and added them to the jar, replaced the lid shook the bee gees out of it and put it in the fridge over night.
We enjoyed it over ice some using rum others like me just enjoying the sweet tropical taste on it's own.
I do have some of the best friends, they are loving, giving people that work hard to make sure we all enjoy life to it's fullest.
No birthday would be complete without cake and Donna, out did herself on mine.
